Each year begins softly, thoughtfully. Selim, our trusted “mago,” approaches each tree gently, asking for permission before making a single cut. His quiet dialogue with the trees—respectful, patient, almost sacred—guides him in pruning thoughtfully, ensuring the health, strength, and productivity of every branch. It is a ritual of gratitude and careful stewardship, deeply embedded in our philosophy.

This careful pruning promotes better air circulation and increased sunlight exposure, ensuring robust growth and optimal fruit production for the coming season.

Spring brings renewal, and our groves awaken to a new cycle of life. It’s a time of attentive nurturing, as we observe delicate blossoms transform into tiny olives. Throughout these months, we vigilantly manage irrigation, continuously monitor tree health, and employ only natural methods to guard against pests and disease.

Spring’s gentle care sets the foundation for a fruitful season ahead, ensuring each olive develops perfectly, capturing the full essence of our fertile land.

In early October, precision defines every action we take. Timing is critical, and we harvest olives at the precise moment they achieve peak freshness and nutritional value. Hand-picked with care, olives swiftly reach our private mill, where meticulous pressing occurs under strictly monitored temperatures, always below 25°C, ensuring minimal exposure to mechanical stress and preserving every beneficial polyphenol.

We take extraordinary care at every stage, from picking olives without touching the ground, to rapid pressing, preserving the exceptional quality and pure character our customers have come to cherish.

Once pressed, our olive oil is immediately filtered and stored in ideal conditions—protected from heat, light, and oxygen. Specialized stainless-steel tanks maintain optimal temperature and freshness, safeguarding the oil’s delicate flavor, fragrance, and nutritional integrity.


This meticulous care continues until the oil reaches your table, delivering unparalleled taste, purity, and freshness with every drop.

Post-harvest, our groves receive their essential nourishment from 100% organic sheep manure, sustainably sourced from mountain-raised sheep fed exclusively organic feed. This rich, natural fertilizer replenishes the soil’s nutrients, revitalizes tree roots, and supports sustainable farming practices, preparing our olive groves for future success.
