Pruning with Respect (February)
Every year begins gently. Selim, our ‘mago,’ quietly asks permission from each tree before making a single cut, carefully listening and responding to their unique needs. This respectful dialogue, marked by patience and deep reverence, ensures each tree thrives, supporting its natural strength and beauty.
Bloom & Growth (Spring)
Spring awakens the groves. We carefully nurture each tree, watching blossoms become fruit under our attentive care. It is a time of vigilance and anticipation, as we adjust irrigation, monitor growth, and protect the trees from pests and diseases naturally.
Early Harvest & Gentle Pressing (Early October)
Timing is everything. Early October sees us harvesting our olives at their absolute best, maintaining vibrant freshness and polyphenol richness. Olives are swiftly pressed at our private mill, rigorously controlled for temperature (always under 25°C), hygiene, and minimal mechanical stress. This meticulous care ensures the exceptional purity and distinctive character of our oil.
Immediate Bottling & Ideal Storage
The freshly pressed oil is promptly filtered and securely stored, preserving its delicate character and exceptional quality until it reaches you. Our storage process involves precise temperature control, safeguarding the integrity and taste of our oil. Every detail is handled with obsessive care to ensure that each bottle reflects our highest standards.
Organic Nourishment (November–December)
Following the harvest, our olive groves are nourished with 100% organic sheep manure, collected from mountain-kept sheep fed exclusively organic feed. This natural enrichment revitalizes the soil, preparing our trees for another fruitful season
